Brave New Order Revisted

While agreeing on many points made by Jack Mauro in his article "Brave New Order", there is one point I wish to dispute. Waiters ARE salespeople; the problem is that very often, they are selling a product about which they know practically nothing. This is particularly the case with wine sales. While some restaurants attempt to educate their staff with tastings, generally it is too little, and without focus or proper guidance.
