Service Standards: 10 Do's and Don'ts

I recently had occasion to orchestrate the "buy out" of a local Restaurant located in my North California neighborhood, for 100 of my nearest and dearest to celebrate a friend's birthday. The event was billed as an "extravaganza" (meaning expensive), which included a full bar, dinner and dancing with a live band. I was asked to plan the event because it's what I like to do for fun and what I'm good at, not to mention the fact that it falls within my job description.
