- If it's questionable as to how old a piece of fish might be, place it in cold water for a few minutes - if it floats, it's fresh!
- The best way to select seafood is always go with the freshest catch. Never purchase seafood that has been out of the sea for more than three days.
- When purchasing a live lobster, there should always be movement in the legs.
