The Rise and the Fall, and the Rise of the Beef Industry

Of all the clichés so deeply entrenched in our popular
speech, one of the most commonly spoken, and to my mind most annoying,
has got to be: "you are what you eat." Knowing what
my personal diet consists of, I don't appreciate the mental self
image this truism evokes. And what does it say about us on a broader
demographic scale, as Americans? Put simply, we are a nation of
cows!
